I have just made a batch and it went just as you explained and as the online video except for the ultimate hour of simmering. Right before it coloured into medium darkish amber, it went gloopy and really thick so that rather than pouring it into your container I had to spoon it so as an alternative to the highest surface area becoming wonderful and
